Smoke Rise Inn Apple-Sweet Potato Soup3 lbs of Sweet Potatoes
1 Medium Onion Diced
4 Tablespoons of Butter
6 Cups Chicken Stock
6 Cups Apple Cider
1 Cup Heavy Cream
Salt & Pepper
1 Vanilla Bean
Bake the sweet potatoes in their skin, 55 to 75 minutes depending on size, until soft.
Sauté onions in the butter.
Scrape vanilla bean into the butter then add stock and apple cider.
Peel baked sweet potatoes and add to the liquid; bring to a boil, then puree.
Add cream and salt and pepper to taste.
